In pet-nat language, “rurale” comes from French 'méthode ancestrale dite “rurale”' and it basically means it's the most farmy, wild style of bubbles. Spontaneous primary fermentation on indigenous yeasts + fresh must from other lots is used to trigger in-bottle secondary fermentation. Aged for 6-8 months on lees in bottle to harmonize bubbles. Blends red fruit and dry minerality in a pét-nat that feels serious yet soft & lovely because of Muskateller addition.
