Bar Restaurant Caviste
Ambre is a flagship cuvee in Champagne Solemme portfolio. This 100% Meunier comes from a chalky parcel located just behind the house in Villers-Aux-Noeuds 1er Cru (Montagne de Reims) and planted with over 50 year-old vines. Olivier farms this vineyard according to biodynamic principles and it’s on the final stage to obtain the organic certification. This champagne is expressive and charged with energy. It spent over 50 months on lees to gain complexity. Despite the restricted malolactic fermentation and no added sugar post disgorgement, it has ripe sweet mouthfeel and bursts with red berries. This is a rare gem, as there have been produced just less than 4500 bottles.
