The restoration of the ancient dry stone walls, the "marogne," which support the terraced terrain, was a long and demanding task. Studying the fossils and petrified shells found among the rock outcrops represented for us a testimony to the earth's evolution and our return to our origins.
We found ourselves with this wild land, where years of neglect had allowed trees and brambles to grow. We sought to harness the vitality of this soil, rich in humus and microorganisms, planting ancient, forgotten grape varieties and cultivating them with respect for their life cycle, using biodynamic principles and agricultural practices that respect the soil and the ecosystem.
We live and work according to the changing seasons, carrying out activities that preserve the natural microbiological heritage that is the true wealth of our land. We cultivate vegetable gardens, olive groves, and orchards, and our animals are part of this agricultural organism. Chickens and heifers in particular tread lightly on our soil, completing the cycle of self-production.
This original universe is the basis of our balance in the vineyard and in the cellar, we ferment "only grapes" (spontaneous fermentations without pied de cuve) from parcel selections harvested at the best moment of ripeness, only a small addition of sulphites before placing in the barrel or bottle, little technique in the cellar but a lot of respect and care in the wines that we follow every day with dedication, we deeply love Monte Dall'Ora and its treasures.
