I have recovered several scattered abandoned native Umbrian vineyard particles, giving them new life. Now they tell a story of balance and harmony. In my vineyards, copper and sulfur treatments are limited In my cellar, there is no room for chemistry. In my wine, there is the substance my land is made of.
Harvest is joyful in September. When grapes arrive in the cellar, fermentation is spontaneously triggered by its native yeasts without any fining or filtration. Maceration is usually 5/7 days contact skins with vinification in fiberglass, steel, or amphora.
