Prodotto esclusivamente da uve Sangiovese, questo vino subisce una lunga macerazione di 7 mesi in anfora di argilla, che gli conferisce una complessità e una struttura uniche. La fermentazione avviene con lieviti indigeni, rispettando i metodi tradizionali. Il vino viene imbottigliato nel mese di Giugno. Si consiglia di servirlo a una temperatura di 14-16 °C.
