The Francesco de Filippis farm is Demeter certified and 100% biodynamic.
Inside the company we also have a small shop where we offer tastings of our wines, as well as the organic and biodynamic agricultural products of our dear farmer friends.
In the vineyard, we work according to the principles of biodynamic agriculture, avoiding the use of herbicides, chemical fertilizers, and synthetic products. Soil fertility is preserved through green manure, biodynamic preparations, and management that promotes biodiversity and soil life. All operations are geared toward achieving a balance between plant, environment, and people, so that each parcel can truly express its terroir.
In the cellar, we adopt a minimal-intervention approach. Fermentation occurs spontaneously thanks to indigenous yeasts, without unnecessary oenological additives and with minimal use of sulfites. The wines are not clarified and undergo only light filtration.
Sincero, Angea, and Matilde are vinified in concrete and steel tanks, materials that preserve the purity of the fruit and the transparency of the terroir. Or, on the other hand, ferments and ages in 5-hectoliter tonneaux that are many years old, where a slow interaction with the wood accompanies its evolution, enhancing its depth without masking the character of its terroir.
