Vino frutto dell'antica tradizione di vinificazione del Nero d'Avola, tramandata da generazioni: moderato contatto dell'uva con il mosto che fermenta(circa 36 ore in vasca di cemento), seguito da spremitura soffice con torchio a vite manuale, processo che garantisce il rispetto di profumi, sapori e aromi originari.Vino prodotto nel 2020, affinato in botti di rovere esauste da 70hl per 3 anni, non sottoposto ad alcun trattamento prima dell'imbottigliamento. Eventuali residui sono dovuti a questo procedimento naturale. Il profumo ed il sapore ricordano quelli del grappolo d'uva matura Nero d'Avola appena rasccolto.
