We grow grapes on eight different plots: Catarratto, Grillo, Inzolia, Zibibbo, Nerello Mascalese, Frappato, Nero d'Avola, Merlot, and Pinot Grigio.
The company also produces an Extra Virgin Olive Oil (EVO), the fruit of a century-old olive grove of about two hectares that my great-grandfather Salvatore bequeathed to us many, many years ago. The varieties are local: Nocellara, Biancolilla, and Cerasuola.
We are a family-run farm, and we are inextricably linked to the culture and traditions of our land and our island.
We care about biodiversity, animal welfare, and respect for what this extraordinary land offers us every day. For many years now, we have not used synthetic products on our land, and the company is in the process of converting to organic farming.
In my wines, I seek the true expression of my land, its soul, its history. I envision a wine free from all artifice, a wine made of light. That's why I've chosen to work simply, following the principles of sustainable viticulture and artisanal cellar management.
Before being an oenologist, I am a winemaker.
I grow my grapes with respect for the land, the plants, and the animals. The grapes are grown in low-yield vineyards with copper and sulfur treatments reduced only to the bare minimum.
This attitude of respect for the territory and for the raw materials (hand-picked) continues in the cellar where fermentation and refinement take place exclusively with Indigenous yeasts and bacteria . This allows the wine to express the true aromas of my terroir and the grape varieties I use. Sulfites are generally added as needed in minimal quantities.
Believing in a place means understanding it, loving it, putting it above everything else.
