The estate currently covers approximately 8 hectares, 2.5 of which are planted with vines. The vineyards are located between 450 and 700 meters above sea level. The soils are predominantly composed of granite rock. Ninety percent of the vines are low-growing bush vines. The predominant grape varieties are Mandrolisai: Monica, Muristeddu, and Cannonau. However, small percentages of other grape varieties are also present, such as Giro, Moscato, "Pascale," and Lacconargiu. We cultivate an experimental section of vineyard grafted with late Nebbiolo, Dolcetto, and Chardonnay.
Manual pruning, plowing, and manual vine removal, as per tradition, are the winter processes. We do not irrigate. To protect against pathogens, we use exclusively sulfur and copper-based products. Harvesting is done by hand. The must is fermented using indigenous yeasts derived from the grapes themselves, without temperature control. The red wines are left on the skins for approximately 8-15 days. They then age for 10 months in small oak barrels and stainless steel before being bottled. The rosé is left on the skins for 12 hours, then soft-pressed with a small press and fermentation continues in glass (demijohns) and stainless steel.
We don't filter or clarify our wines. Sulfur dioxide is used to a minimum. We currently have no biodynamic or organic certification. Our wines are made entirely from our own grapes.
