Questo Savagnin nasce dall’incontro di uve provenienti da diverse parcelle intorno al villaggio di Arbois, tra i 30 e i 60 anni di età, tutte coltivate in regime biologico e tutte raccolte a mano prima della pigiatura e della fermentazione spontanea in acciaio. Il vino affina in barrique usate e scolme, a contatto con l’atmosfera: questo permette ai lieviti di creare una sottile pellicola protettiva che conserva il vino che, nel frattempo, matura intense e caratteristiche note ossidative.
