Uve chardonnay che appena raccolte vengono diraspate e messe in pressa. Senza aggiunta di lieviti, inizia la sua fermentazione e vinificazione in due modi diversi: la massa più grande viene messa in cisterne di titanio, mentre la più piccola in barriques artigianali da 220 litri. Dopo 11 mesi di di fermentazione , vari travasi e cambi massa, le parti vengono miscelate.
