100% nebbiolo, Stefano Occhetti è stato il primo a vinificare uve del Cru Sanche nella zona del Roero. Le pratiche in vigna sono queste: inerbimento naturale e concimi naturali sotterrati a mano prima di applicare l'agricoltura rigenerativa. In cantina le uve sono sottoposte a lunga macerazione a cappello sommerso per 22 giorni e la malolattica viene svolta in legno, mentre il vino riposa 20 mesi in tonneaux.
