When working in the vineyards, we use as few mechanized tools and vehicles as possible, respecting the unique character of our terroir. All tasks performed in the vineyards are done exclusively by hand. We use only green manure to nourish our soil. For plant protection treatments, we use small quantities of copper and sulfur. The harvest is done by hand, and the grapes are carefully placed in crates to prevent oxidation of the must before fermentation.
The process of transforming grapes into the finished product, wine, is carried out without any chemical intervention: spontaneous fermentation without the use of any ferments whatsoever. No chemical or physical practices are used to alter or modify the natural characteristics of the must or wine. (No filtration, no pH adjustment, and of course, no enrichment.) We use very low quantities of sulfites; you can verify this in our analyses.
Since 2017, we have been vinifying in terracotta barrels to be consistent with our philosophy of using natural resources and respecting the culture of our country by vinifying in these barrels. We have also started a project to age our grand cru wines in large vats for 36 months. We have been certified organic since 2000, so for almost 20 years. Our partner (the former owner of the estate) was a pioneer in Mombaruzzo in practicing organic viticulture, which is why we bought the estate in 2017.
