Denis Montanar and the Borc Dodon project were officially founded in 1995. Denis Montanar cultivates primarily native grape varieties in the Aquileia plain, on the western banks of the Isonzo River, closest to its mouth. The grapes produced are: Tocai Friulano, Verduzzo Friulano, Sauvignon Blanc, Pinot Bianco, Merlot, Refosco dal Peduncolo Rosso, and Cabernet Franc. All vines are sourced from mass selections carried out in ancient local vineyards. The soil is sandy, composed of a mixture of silt and clay, which gives the wine a distinctive fresh and mineral note. To preserve the naturalness and purity of the fruit, any treatment with chemical compounds or synthetic substances is prohibited in the vineyard. The winery follows the same approach: vinification occurs spontaneously using indigenous yeasts with more or less prolonged maceration in open wooden or fiberglass vats. Aging can take place in steel or concrete tanks for younger, more carefree versions, or in wooden barrels for more intense and structured interpretations, to smooth out all the wine's finesse. No invasive processes such as filtration or fining are performed before bottling.
