Remedio is a company founded in 2021 by Michael Cararro and Alessandro Stefani. Our goal is to create a multifunctional company, which focuses on different aspects of agriculture: wine, vegetables, fruit and forestry, implementing biodiversity through organic methods and respecting the environment with a strong eye on changes climatic, then put into practice methods of support work. One of these is undoubtedly regenerative agriculture, cultivation techniques that allow you to benefit from the properties of the land, without however having to exploit or impoverish it. At the moment the company has 7 hectares, we plan to add more by the end of the year, of which 0.5 are vineyards, 4 are woods and 2.5 are arable land and pasture. The vineyard is managed entirely by hand, from shoulder pump treatments using small quantities of sulfur and copper working with the pH of the water, adding the pasteurized lees of the wine made the same year and nettle decoctions, passing through the grass cut and the under-row. Winter and spring pruning done following the Simonit and Sirch method, adapting it to our needs. The only work with the machine is at the end of the harvest where we work the land for the sowing of green manure which takes place every year in alternate rows. In the cellar we try to work as natural as possible, the fermentations are all spontaneous, no filtrations or clarifications are made. The sulfur dioxide is added only if the analyzes do not satisfy us, the 2021 has seen very little, the 2022 has yet to see it. Slowly we add pieces that are vital for us such as the addition of three barriques for the refinement of our 2022 rosé, having started from scratch, every addition is a victory for us.
