Our vines, aged between 15 and 50 years, come from 5 small, unique plots located between 300 and 400 meters above sea level, totaling approximately 3 hectares. The vines are cultivated with respect for the land, without the use of any synthetic products, and treated only with copper and sulfur when necessary to prevent disease or mold. We vinify the grapes from each plot separately. Our hand-picked grapes ferment in open vats, with prolonged contact with the skins without temperature control. In keeping with local farming tradition, these are mostly mixed varieties that we vinify together; the only exception is the Aglianico Rosato MU', a single-varietal white wine. Fermentations are spontaneous, activated by the indigenous yeasts naturally present on the grapes, without the use of selected yeasts, adjuvants, or oenological additives. We do not perform clarification, filtering, or stabilization. Sulfur dioxide is never added at any stage of production. After a couple of rackings and months of maturation on the fine lees, in glass, fiberglass, or steel, we bottle our wines by hand.
