The area cultivated with vineyards is approximately 7.5 hectares, the soils are predominantly clayey and the rows are spread across a sinuous hilly surface 5km from the Ionian Sea and 10km from Aspromonte.
The cultivated varieties are Calabrese Nero, Greco Nero, Aglianico, and Gaglioppo, black grapes; Greco Bianco and Falanghina, white grapes.
In the vineyard we work through fertilization with organic material (manure, compost, green manure, farm waste), treatments with copper/sulfur/sodium bicarbonate and essential oils (sweet orange, neem).
The harvest is strictly manual with careful selection of the grapes.
In the cellar, we use exclusively our own grapes, which are destemmed and pressed within a few hours of being harvested. We allow fermentation to occur spontaneously thanks to the presence of indigenous yeasts.
We monitor all stages of winemaking, intervening where necessary with oxygenation (pumping over and punching down) and temperature control, to allow the grapes to express themselves to their full potential and to support the work of the indigenous yeasts.
We work exclusively in stainless steel tanks to ensure the maximum expression of the grape variety and fruity notes. For the maturation, we work on the fine lees, practicing "sur lies" aging.
Our goal is to enhance our land and its native varieties, producing an authentic, healthy, and genuine wine that brings the true flavor of the grape to the glass.
