Will be released spring 2026. Silvaner Mantis Our first-ever Silvaner – and a quiet statement for one of the most underrated grape varieties out there. Too often overlooked, Silvaner is a true underdog: capable of depth, energy, and raw expression when grown in the right place. This single-vineyard wine comes from our oldest Silvaner vines, over 40 years old, rooted in volcanic porphyr at 280 meters above sea level – the highest point of our plateau, right next to our Riesling. Fermented in used French oak (tonneaux) and aged under a gentle veil of flor yeast, this wine is all about restraint and precision. On the nose and palate: iodine, maritime, crushed stones, with just a subtle flicker of fruit – citrus peel, maybe a hint of pear. Tastes like the primeval sea. Jawdroppingly salty, lean, and focused. A wine with almost no fat, but all the bones in the right place. Contemplative, yet endlessly drinkable.
