The vines are worked organically and the wines have been certified organic since the 2022 vintage, gentle pruning and green manure are implemented every year.
The harvest is done by hand in mid-September. The terroir is clay-limestone, late and cool at night thanks to the many hills, narrow valleys and small streams typical of Green Provence. The wines thus retain a Mediterranean character but also great freshness.
With a natural approach in the cellar, the yeasts are indigenous, the vinification is done without input, fining or filtration, and only 15 mg/L of sulfites can be added at bottling.
Description of vintages:
Le blanc Premier Rolle 23, IGP Var, direct press 100% rolle, 75% stainless steel and fine lees 25% in demi muid and total lees
Vaudeville 23 rosé, IGP Var, direct pressing of Merlot and Cinsault (30%) in stainless steel vats.
The red Et Le Jeu 23, VDF, is a one-week maceration of 80% old Carignans and 20% young Grenaches aged in stainless steel vats. It is the only cuvée de négoce, AB grapes that I harvested in the Luberon.
The claret Entracte 23, VDF, is a new vintage, the first harvest of Cinsaults grafted onto Merlot, with very short maceration (3 days) and aging in stainless steel vats.
The red In Media Res 23, IGP Var, is a 17-day maceration of 50% destemmed 50% whole bunches Merlot followed by one year of aging in stainless steel vats.
