On the northern slopes of the Cabrières plateau, her 70-year-old Grenache and Mourvèdre vines sink deep into a clay-sand soil with rolled pebbles. These two great Rhône grape varieties express all their purity, finesse, and freshness here. Herbal teas and biodynamic preparations are applied meticulously, plot by plot. These practices strengthen the life and vitality of the soil and the vines. From the outset, in order to better understand the intrinsic identity of each of her eight plots, she chose to separate the grapes into small vats.
Very quickly, Élodie decided to make wine as naturally as possible. No oenological additives are used. Aging in concrete tanks gives the wines a fine tannic structure, lusciousness, and freshness. 2021 saw the release of the third vintage of her sulfur-free cuvée, "A en perdre le soufre" (To Lose the Sulphur). A red Châteauneuf-du-Pape cuvée following the same approach is currently being developed.
