The Manoir de la Tête Rouge was built in 1649 at the foot of this hill, within the village but outside the walls. I acquired the property in 1995, along with 10 hectares of vineyards, including the Enchentoir plot. The vines are planted on the finest clay-limestone soils of the Saumur region. The initial restoration, transforming the property into a residence and winery, was completed in 1996, at which point I purchased an additional 4 hectares. In 1998, the conversion to organic farming, certified by ECOCERT, became a necessity, and the first organic vintage was produced in 2001. The conversion to biodynamic farming, certified by BIODYVIN, took place in 2010, and in 2013 I acquired 4.8 hectares of Cabernet Franc already cultivated biodynamically.
