We took over as a family (father/mother/daughter) the Domaine de l'Enchantoir in 2016, a beautiful 19th century certified organic vineyard of 15ha and located in the village of Puy Notre Dame south of Saumur. The estate was in an advanced state of disrepair when we arrived, so we had to focus our efforts on renovating equipment and buildings and working the vines to restore them to vigor. Our philosophy: favor manual work and relaunch the work of the soil to awaken the vines of chardonnay, chenin and cabernet franc which make up the estate's grape varieties. With a pickaxe, soft pruning, spreading compost, working the soil on the surface and protecting with essential oils, we have succeeded in restoring great vigor to our vines and achieving a very good quality of grapes. Today we complete these actions with the planting of trees and hedges to protect the vines and develop the diversity of the ecosystems of our plots. In particular, we promote the protection of our vines by the return of bats which nest in large numbers in our troglodyte cellars. In the cellar we work with indigenous yeasts. We set up a starter before the harvest, a sort of sourdough that will allow us to seed our harvested juices. We favor the minimum of interventions on our wines and slightly sulphite them at the bottling. Our range is made up of 8 to 10 wines depending on the volumes that the weather of the year wanted to leave us: 4 still cuvées in Cabernet Franc red under the Saumur, Saumur Puy-Notre-Dame and Anjou red appellations, 3 still cuvées in white and monovarietal chardonnay and chenin for our Saumur appellations, 2 natural sparkling wines and a maceration of chenin.
