Located at the northernmost edge of the Pic-Saint-Loup appellation (Corconne and Vacquières), the vines are planted amidst the garrigue, surrounded by limestone cliffs. The terroir is known as "Gravette," which gives Pic-Saint-Loup one of its most renowned terroirs. It consists of angular limestone pebbles eroded from the cliffs, mixed with brown soil. The soil is particularly well-drained and deep, retaining a cool temperature in summer. The region's Mediterranean climate is characterized by hot, rather dry summers, and we benefit from heavy rainfall in autumn, typical of the Cévennes foothills.
The grapes are hand-picked into crates, sorted, and gravity-fed into the vats. Vinification is always carried out without oenological products, in order to remain as close as possible to the intrinsic nature of our terroir, to create vibrant and precise wines. The wines are racked before and after winter to achieve natural clarification. They are then sulfured at 2 g/hectoliter (20 mg/l) during the second racking or at bottling, depending on the tasting experience.
