We are Saskia and Maurice Goetschy, winemakers in Roquemaure since 2017. Boucarut is a family estate of 20 hectares (15ha planted) in one piece. We started with organic farming from our start in 2017 and know nothing else ... from the 2020 vintage, our wines are certified organic. We both work in the vineyard and in the cellar with the help of an employee. Our terroir is mainly made up of sandy slopes, but also plateaus of rolled pebbles and a sandy-silty plain. The good health of our vines (and of us), the biodiversity of the flora and fauna of our lands, as well as the quality of our grapes are our priorities. We maintain a partial grass cover (one row in two) natural with late mowing (July / August) in order to allow the greatest diversity of wild plants to achieve their full cycle. We try to limit the use of copper and tractor passages as much as possible. We harvest by hand, taking into account the health of the grapes. In the cellar we avoid, if not strictly limit inputs, in particular sulphites (used homeopathically for racking and placing without exceeding an addition greater than 20 mg / l in total). We favor fermentation with indigenous yeasts. We want our wines to express their terroir or their typicity and their vintage and our role must be limited to supporting them in this direction. We try a lot of things, even if it means making mistakes, we do not pretend to agronomic, ecological or oenological perfection, we have a lot to learn, but we make it a point of honor to reflect, to follow our aspirations and to keep a critical spirit but without dogmatism with regard to modern agronomic and oenological technologies. We are also members of the union for the defense of natural wines.
