Located in the historic heart of the Terrasse du Larzac appellation, this is one of the smallest estates in Languedoc. However, present on the finest tables in the region, Romain's wines are fast becoming essential references in the region. In 2011, he bought an abandoned plot in Saint-Jean-de-Fos. 70 ares, of which he produced the first vintage in 2012. A single grape variety in Mourvèdre collected and vinified on the finesse of the fruit. Since then Romain has come a long way. The estate now consists of 5 ha in the towns of Jonquières and Montpeyroux. The vineyard is nestled on the foothills of Larzac. This great clay-limestone gravel terroir is marked by the freshness that comes down from the plateau. Romain does the work in the vineyard almost entirely by hand, following the principles of organic farming as well as biodynamics. An approach which is reflected in its vines and its cellar by a slow work aiming to reproduce ancestral gestures which tend to disappear. All the stages in the production of his wines - from growing the vines to bottling - are carried out by him and without adding inputs for the most balanced wines possible.
