Paul Chabal

In reconversion after ten years in Paris in the middle of the music and two years of peregrination through the French vineyards. Installed in the Gard, near Uzes, 2022 is my first vintage. The grapes are in the first year of organic conversion, from 5 hectares worked and shared with the Domaine des Magesses and Ad Vinum. I practice physiological soft carving and the plots are grassed, the passage of the tractor is limited to what is strictly necessary (shredding and treatment), some plots are worked by horse for the cavaillon. The harvest is manual, the yeasts are indigenous and no input is used in winemaking. All the work is done by gravity and/or bucket. Depending on the desired vinification, I use fiber, stainless steel or even barrels.
