Initially, I will transition to organic farming, then gradually to biodynamic practices to avoid stressing the vines. This is why I am progressively integrating the lunar cycle into vineyard management and cellar work. I am committed to protecting this beautiful natural environment in which I thrive. As an eco-conscious winemaker, I am proud to practice responsible and sustainable agriculture. This environmental quality is essential in my wines. The grapes are harvested by hand in 20 kg crates for all our cuvées. My goal is to preserve the quality of the berries and prevent oxidation of the juice. No additives are used in the winemaking process. A starter culture is prepared beforehand and inoculated at 10% upon vatting to activate alcoholic fermentation. I use sulfites in homeopathic doses because my project is to move towards biodynamic vineyard management and ultimately produce wine without sulfites. The pressing is carried out in a membrane press. Throughout the process, we control the pressure exerted on the pomace to avoid extracting excessive tannins.
