In 2007, he decided to settle there permanently to work with Chenin Blanc, Gamay, Pinot Noir, and Cabernet Sauvignon grapes... but also, and above all, with local varieties that he is determined to preserve, such as Fer Servadou and Négrette Bagnard. The estate comprises approximately 4 hectares of vines spread across two plots. The first is located behind the winery at an altitude of 300 meters, and the second is situated on the steep slopes overlooking the Selves River at an altitude of 500 meters. Since its inception, his vines have been cultivated organically, and only the bare minimum of sulfites is added during vinification.
