On the 30 hectares of vineyards that make up the Domaine, Michel Maestrojuan and his team produce Côtes de Gascogne wines, Floc de Gascogne, and Armagnac, as well as a traditional mustard made with grape must. The estate also cultivates various cereals (corn, soybeans, einkorn wheat, etc.) on approximately 60 hectares, which are sold through both short and long distribution channels. Wild fallow land surrounds the vineyards and cultivated plots, along with kilometers of natural and renewed hedgerows, groves, and mature trees. Nesting boxes and habitats for birds and bats are regularly installed to promote biodiversity.
In the vineyard, soil cultivation, the use of cover crops, and organic amendments all contribute to creating a living viticulture. For his wines, Michel intervenes as discreetly as possible, using gentle pump-overs on the partially or fully destemmed reds. The white wines are vinified in tanks or barrels on their lees after slow pressing without sulfites and gentle settling. The wines are made naturally with indigenous yeasts. Little or no filtration is carried out. Aging takes place in tanks, barrels, or amphorae, depending on the wine. Michel limits the use of sulfur in some of his cuvées. The estate's Armagnacs are distilled in an Armagnac still, aged traditionally in 400-liter oak barrels from Southwest France, and bottled close to their natural strength without any added caramel or sugar. They reflect the terroir of the Ténarèze region.
