The vines are Bio + Nature & Progrès, plowed 1 row out of 2, the other row mowed, 4Kg of copper /ha/year, the same amount of sulfur.
Hand-harvested for the 2022 white and red wines.
For the cellar, I leave the wine alone; no sulfites are added during vatting or bottling. I'm new to this, so I haven't fully grasped how everything works, and it might change over time, but I still rack frequently (four times before bottling) to minimize contact between the lees and the juice.
No filtration at bottling, careful racking.
Returnable and numbered bottles. No CRD/Marianne capsules because they've been useless since 2019 and nobody knows what to do with them.
No orange wines at the moment.
