Domaine La Réserve d'O, created in 2004 by Marie and Frédéric Chauffray, is located in the town of Arboras, in one of the highest and coolest sectors of the Terrasses du Larzac appellation area. . Passionate winegrowers, they cultivate a biodynamic vineyard. Like viticulture, winemaking is intended to be very close to natural cycles, that is to say little interventionist. The idea of giving the name of their house La Réserve d'O to the Domaine comes from the desire to create a nature reserve where we can produce grapes in a rich ecosystem, both in terms of fauna and flora. . The objective is to work in a preserved environment, to optimize the balance of the soil, to create biodiversity, to allow the terroirs to express themselves fully in the wines. This is the essence of the profession of winegrower. THE VINEYARD The vineyard is located at an altitude of 400 m on the foothills of the Larzac Plateau, just under the Col du Vent, and overlooks the Hérault Valley. The 14 ha take root in a clay-limestone soil on a bed of stony chips and are swept daily by the north winds. WINES With very marked day / night temperature ranges in summer, the grapes ripen slowly and give our wines elegance and great aromatic complexity. The wines were very quickly distinguished by their greed and their original character and also by their own very "terroir" identity: signature of our Appellation "Terrasses du Larzac".
