The grapes are harvested manually into 12kg crates. They are transferred by gravity into the vats and fermented using naturally occurring yeasts.
The aging process in demi-muids is specific to each wine and carried out respecting the vineyard plots of the estate.
Keen to produce healthy, vibrant wines that reflect its terroirs, production is structured around various cuvées, which may vary from vintage to vintage.
