The estate has been undergoing conversion to organic farming from the beginning (certification in 2025), but we want to go much further in our vineyard practices: conservation agriculture, gentle pruning, biodynamic practices etc ... All work is done by hand: pruning, bud removal, treatments, clearing, harvesting in 8kg crates, strict sorting in the vineyard and in the winery.
In the cellar, our fermentations begin naturally, thanks to the indigenous yeasts present in the winery. Maceration times are short and extractions are gentle (infusion). We aim to maintain freshness and fruitiness in our wines, so they are aged in stainless steel tanks for at least six months or in inert containers (barrels that have held several wines, stoneware eggs) for an additional six months. Regarding SO2, we add 2 grams per hectoliter before bottling to reduce the risk of microbiological spoilage and/or oxidation.
