I took over my father's vines in Savignargues, in IGP Cévennes, in 2018, and undertook to set up my cellar at the same time. I work organically, and I have my flock of sheep, which allows me to completely mow my vines in winter, and bring manure to about 4ha. I vinify 9ha that I have selected I harvest by hand and vinify without input and by gravity (the advantage of not having a building is that I was able to design it as I wished)
