Sauta Roc - Laura Borrelli & Bertrand Quesne
Sauta Roc was born in Vailhan. After traveling around the world, from Australia to Italy, Laura Borelli and Bertrand Quesne cast anchor as they approach its prominent rocks, the Causses, which emerge from the exuberant scrubland.
Vailhan is at the end of the Terroir de PéZenas. She sits on a ground of shale, limestone and basalt. Suffice to say, here, Nature has had some ups and downs. From its bowels flows a river, the Peyne, which runs as far as Pézenas and flows into the Hérault.
Sauta Roc was born from this rocky land. This is the origin of its name. It’s Occitan. And at the same time, when Laura says it, it sounds like a typical Italian name, like her.
The isolated vines follow the alignment of the relief cut by erosion. They benefit from a preserved natural environment, a real diversity. The stone marks the landscape, influences the couple's work in the vineyard and is imprinted on the labels of the estate's bottles. Each cuvée is an original drawing by Laura who wanted to illustrate certain imposing reliefs that make her daily life.
The couple are entering their fourth vintage in 2019. They have the confidence of the daring when they tell you about their projects, what still needs to be done to meet their expectations, and are happy to make wine in the AOC Languedoc Pézenas appellation.
