A couple, a bet, an adventure! Three words to sum up the story of Terre Ensems (Together in Occitan) Estate created in 2018 by Michel Bouisseren and Krystel Costes in Berlou (34360) Our estate is 11 hectares on a schist soil and composed of 11plots. From Carignan, Cinsault, Grenache, Mourvèdre, Syrah and for the harvest 2023 a plot of Vermentino. These are essentially very old vines (between 60 and 90 years old) often in the middle of oak forests and arbutus located between 260 and 410 meters above sea level. 4 plots no mechanized are entirely worked manually. For the rest we very little touch the ground. weeding is done in eco-pastoralism with our own sheep. A biodynamic approach has been practiced for two years. We have no label or appellation but we work without chemicals in the vines (except a minimum of copper and sulfur) or inputs in the cellar. Our harvest is manual in small crates and by gravity (traps above the vats). We work with native yeasts and our wines are neither fined nor filtered. Most of the cuvées are without added sulphites or with a maximum of 2gr/hl. No intervention during vinification except daily manual punching down. Our cuvées are red and exclusively mono-varietal in order to enhance each of our grape varieties. All our wines are made from our own grapes!
