In 2015, we settled in Aubais, in the Gard region, to begin creating our estate. Having no land at the beginning, we started by purchasing grapes and renting land, then, little by little, we were able to acquire several plots of vines and olive groves over the last few years and today we proudly work around ten hectares in organic and biodynamic agriculture under the Demeter label.
All the islets were carefully chosen, partly for their terroir and partly for their diversity in fauna and flora to nestle our crops in a healthy environment. We thus planted our whites on yellow marl in Saint-Mamert-du-Gard, a humid terroir benefiting from the freshness of the Cévennes. For the reds, we selected limestone scree dating from the Hauterivian and Valanginian periods around the village of Aubais to bring minerality and lightness to the wines. We managed to take over old vines planted in the 1960s in order to work with quality plants in massal selections.
Le Quai à Raisins is our grape purchasing project in partnership with Languedoc winegrowers. With them, we develop plots of land using grape varieties native to their region and terroir.
All grapes are hand-harvested and then vinified using native yeasts without the addition of sulfites. Depending on the vintage, the wines may be lightly sulfited at bottling. A minimalist yet precise vinification process allows us to produce pure, vibrant wines with a true expression of the terroir.
No rose wines at the moment.
