All the plots of land were carefully chosen, both for their terroir and for their diverse flora and fauna, ensuring a healthy environment for our crops. We planted our white wines on yellow marl in Saint-Mamert-du-Gard, a humid terroir benefiting from the cool climate of the Cévennes mountains. For our red wines, we selected limestone scree dating from the Hauterivian and Valanginian periods around the village of Aubais to impart minerality and lightness to the wines. We were also able to revive old vines planted in the 1960s, allowing us to work with high-quality vines through massal selection.
Le Quai à Raisins is our project to purchase grapes in partnership with winegrowers in Languedoc. With them, we develop plots with grape varieties endemic to their region and terroir.
All grapes are harvested by hand and then vinified using indigenous yeasts without the addition of sulfites. Depending on the vintage, the wines may be lightly sulfited at bottling. This minimalist yet precise winemaking allows us to obtain pure and vibrant wines with a true expression of the terroir.
