Ekaterina planted 14 grape varieties, including foreign varieties such as Saperavi, Assyrtiko B, Alvarinho B, and Verdejo B, as well as varieties tolerant to fungal diseases (Soleri B and Muscaris B), and 240 trees (olive and oak) on a single 7-hectare plot, following the viticulturalist concept: rows of vines alternate with rows of olive and oak trees, creating ecological corridors covered with nectar-producing flowers. The vines are trained in the traditional goblet style using stakes. Cultivation techniques such as planting a cover crop of nectar-producing flowering species between the rows are employed in the vineyard. The treatment used in the spring is Bordeaux mixture.
The grapes, harvested by hand from plots of vines already in production (Grenache, Aubun, and Marselan) acquired in 2020 within the commune, are vinified with minimal intervention to express the terroir: indigenous yeasts, no fining or filtration. Small doses of SO2 may be added if necessary (total SO2 < 15mg/L). Vinification takes place on the ground floor of their residence, a former train station, while awaiting the construction of a bioclimatic building on the plot.
