La Cave Aux Fioles

La Cave Aux Fioles is in Northern Catalonia, in the heart of Roussillon and nowhere else. It is between Rivesaltes and the foothills of the Corbières that I have settled.

Since 2018, I have been working with passion and respect for life on our terroir of beautiful ochre clays on the Corbières karst plateau. Our land extends over seven hectares of small plots of old vines.

Pruning our vines in the goblet style requires almost entirely manual labor throughout the seasons. This cultivation method is perfectly suited to the arid, windy, and sunny climate of our region. We are certified organic and practice biodynamic farming.

Our yields are very low, which allows us to harvest fully ripe fruit from well-adapted native grape varieties: Lledoner Pelut, Carignan, Macabeu, Malvoisie and Grenache blanc.

Our commitment includes manual labor, joy, and respect for nature and humanity.
