Aymeric earned his Master's degree in International Wine & Spirits Business in Burgundy and then went on to make wine in Argentina, Chile, California, and South Africa. Jordan studied Traditional Chinese Medicine in Toulouse and Avignon before redirecting his career to apply these same Eastern principles to the vineyard and its environment. We cultivate our 15 hectares of vines ourselves, and our family helps us a great deal. Since 2018, we've also had a part-time employee to assist us. We are located in Montblanc, a small village 10km from the Mediterranean, between Narbonne and Montpellier. Our family has lived there for over 500 years, so it goes without saying that we have deep roots and know almost everyone! In the vineyard, the rules are quite simple: everything that can be done by hand is done by hand; only observation guides us to take certain actions, and only when and if necessary. We practice organic and biodynamic farming (certified) but above all, we want to focus on the vine and its environment (particularly by encouraging biodiversity). We spend most of our time in our vineyards because that's where the wine is made... and it requires A LOT of work! In the cellar, things should be simple if we've done the work in the vineyard! By hand-picking (and sorting) healthy, ripe, and concentrated grapes, we have the raw material for a great wine. No sulfites, no enzymes, no yeasts, no... anything is added to our grapes: we trust our terroir to provide them with what they need. But while Natural Wine doesn't require any kind of additives, it does demand even more work and attention than conventional wine: hygiene must be impeccable, temperature control effective, and the grapes perfectly balanced. Tasting is our only guide in the decisions we make each day... Some of our wines are produced without any additives or sulfites, others may simply be lightly sulfited. Everything is done on a case-by-case basis, without a formula or dogma. Above all, we ensure that they have the natural balance (of color, acidity, alcohol, and tannins) to age gracefully and be enjoyed at the table...
