Emilien Jean
Son of a winemaker, after my viticulture / oenology studies I was trained by two winemakers: Michel AROLDI at Château Dompierre in Pauillac, and Sylvain FADAT at Domaine d'Aupilhac in Languedoc. Then after a few vinifications in the North Rhône coasts, Australia and the Loire, I decided at 23 to return to the family farm and to exploit the best plots.
The estate is located on the left bank of the Garonne, in the town of Cocumont, a place called La Gravette. The soils are clay-gravel (as indicated by the name of the locality) and clay-limestone.
It is made up of 4.5 ha of old vines over 30 years old: malbec, cabernet franc, abouriou and merlot for the reds, sauvignon blanc for the whites (currently produced in the Côtes du Marmandais appellation).
The vines have been in organic conversion since 2018. Budding and green harvesting to obtain yields of around 30hl / ha. Manual harvesting throughout the area.
At the winery, my desire is to keep the fruit to the maximum and that the aging gives my wines all their finesse. Use of natural "indigenous" yeasts, aging for 18 months in 400, 500 and 600 liter barrels. Bottling is done without fining and without filtration.
