All cuvées are aged and bottled at the winery in Laroche Sud, commune of Sain Cernin-de-Larche, in the country of Brive-la-Gaillarde.
More than 450 km separate the arpents of Causse Corrézien and those of Baie de Paulilles. None of these 12 garden plots are similar to each other except that they share a manual work, with absolute respect for biodiversity.
It should be noted that since January 2018, Sébastien Brunet, Antoine Floirac and Nicolas Laval have taken charge of the viticultural work on Premier Essarts and Soulane, primary red plots. The red and white varieties are very diverse. Merlot, Petit Verdot, Pinot Noir, Arinarnoa, Syrah, Cabernets, San Giovese, Touriga Nacional, Nebbiolo, Grenache Noir, Carignan. Rose Sauvignon, Chardonnay, Arriloba, Sauvignon Blanc, Semillon, Riesling, Auxerrois White, Viognier, Grenache Gris and White. In graft-welded, francs of foot, marcotted, cut, trellised, goblets. The winemaking process is without destemming, the aging is long, in barrels until the 2015 vintage, in vats and soon (2019 vintage?) In sandstone jars. Bottling is manual, as is waxing and double labeling.
As obvious, no input is tolerated in the wines.
