Organic and biodynamic farming practices naturally emerged as a way to express the terroir of each plot. Alternating tillage and cover crops is implemented according to each individual plot. The majority of the plants used, in addition to copper and sulfur in the vineyard, are harvested on the estate or in the Médoc region. The harvest is done by hand with the help of many friends to give the wines that extra touch of soul. Vinification is carried out naturally with indigenous yeasts and gentle extractions, and whenever possible without the use of a wine pump, in order to preserve fruit and finesse. Aging lasts from 8 to 18 months in tanks and old barrels, depending on the specific plot. Bottling is done without fining or filtration, with a total SO2 level between 0 and 30 mg/L, depending on the cuvée and vintage. The estate also has collaborative projects with winemakers outside the Médoc.
