It was after about ten years as a pastry chef in Michelin-starred restaurants that my interest in natural wine was sharpened.

Naturally curious, I sought out winemakers in various terroirs and launched my own winemaking venture in 2021. My first vintage was in Chile, among friends, on 150-year-old vines nestled in the foothills of the Andes in the Maule Valley. It was an incredible human adventure. Back in France, I spent the season at Domaine de l'Astré, where I also produced my first French vintage as a négociant, five cuvées made without additives or sulfites. The next chapter will unfold in the Béarn region at the foot of the Pyrenees.
