Originally, Florian grew up in a family of winegrowers in Germany, Weingut Clemens Busch, Moselle vineyard, and then studied viticulture and oenology and gained a lot of experience in France and abroad, before settling down with Paola, who had just completed a career change in agriculture.
The estate gradually expands over 9 hectares using polyculture, with vines, aromatic plants and olive trees.
Working the land organically and biodynamically has always been a given. From the outset, we adopted farming practices that promote soil life and biodiversity.
The grass grows spontaneously for much of the year, depending on water availability. Some plots have been sown with green manure to provide good plant cover, organic matter, improved soil health, and beneficial insects. We intervene based on observations and needs.
We bring in compost, apply biodynamic preparations (500P) and plant infusions (horsetail, nettle, etc.) or hydrosols (bay laurel) to strengthen the vines.
Here and there, we interplant with other fruit trees, small or large (barbarous lyciums, jujube trees from Provence, apricot trees from Roussillon), as well as drought-resistant aromatic plants.
The harvest is done by hand, and allows for a combination of good human energy, respect for living things, and a precise choice of ripeness for the natural expression of the terroir.
In the cellar, our winemaking is minimally interventionist. Our wines are unadulterated. Fermentation occurs spontaneously, using indigenous yeasts. These processes are unique to our terroir and reveal the life and balance of the soils in the vineyard.
The wine is neither fined nor filtered. Sulfites are used in minimal quantities, when necessary.
Direct pressing or maceration, with or without stems, we enjoy experimenting with different extraction methods. Maceration times vary depending on the vintage, the alcohol levels, and the tannins. Pump-overs, punch-downs, and pressing punctuate the post-harvest process…as we guide the grapes on their journey to becoming wine!
Our intention is to maintain balance and subtlety.
We offer 1 white wine, 1 orange wine, 1 rosé, 1 white petnat from black grapes, 4 reds, and gourmet grocery products made from plants and olives.
No sparkling wines at the moment.
