This young winemaker arrived at the estate brimming with ideas and convictions. Under his guidance, the vineyards were converted to organic farming—a logical step, and as a logical consequence, the wines were made naturally. We use neither mineral fertilizers nor chemical pesticides. We encourage life in our soils through year-round ground cover. This cover can be natural or chosen from plants with agronomic benefits (legumes, cereals, cruciferous plants, etc.). The organic certification we hold imposes rules in the cellar that we don't find restrictive enough. This designation currently has no legal standing, but there is a consensus within the industry: the grapes must be cultivated at least according to organic farming principles, harvested by hand, and no additives should be used during vinification except for sulfur in very small doses (30mg/l for reds and 40mg/l for whites). The result is wines with different aromas, often complex and unique (more adjectives) which can also be cloudy, because they are not filtered, or slightly carbonated, due to the CO2 present in the bottle which escapes when opened.
