Respect for nature and living things, working with the land is paramount at the estate today. Winemaking: Out of respect for the grapes and the work carried out throughout the year, the harvest is done exclusively by hand; the grapes must be healthy and uncrushed. For fermentation, we favor the life naturally present on the grapes, using only indigenous yeasts. Pressing is done gently and slowly. Our wines are vinified in the most natural way possible; they are fermented grape juice without additives, filtration, chaptalization, or any other manipulation that alters the primary product. We produce different cuvées from direct press or blends, single varietals or macerations, depending on the terroir and the vintage. For this, we use different containers depending on the needs of the wines: stainless steel tanks, barrels, and stoneware amphorae. The estate embraces this minimalist philosophy to produce wines with greater purity, balance, and drinkability.
