I am bringing these old vines, sometimes forgotten, back into production, convinced of the enormous potential they can bring to our wines. I am beginning a long and meticulous process of restoring the vineyard: replacing missing vines, trellising, replanting... All work on the vines is done by hand.
No chemicals are used; the soil is worked mechanically to disrupt the vines' root absorption and suppress weed growth. To combat fungal diseases, I use treatments authorized in organic farming (copper and sulfur) supplemented with herbal teas and decoctions.
Against the homogenization of tastes, my goal is to craft authentic wines that reflect the terroirs where the vines grow, the vines that yielded the harvest, and the winemaker's expertise. Hand-harvested at peak ripeness, with the utmost respect for the integrity of the grapes, no chaptalization, and no physicochemical treatments applied to the must. Sulfur is used sparingly to allow the must to complete its fermentations and achieve natural stabilization of the wines.
