Le Sot de l'Ange - Angélique & Quentin Bourse
Angélique and Quentin Bourse, artisan winemakers of the estate Le Sot de l'Ange, made the big "Sot" in 2013 by choosing to settle on the vineyard of Azay-le-Rideau. The vineyard is certified in organic farming by ECOCERT FR-BIO-01. Dynamic, we constantly seek to change our practices in the vineyard as in the cellar for greater respect for the human and the environment. The soil, the plant and the wine are worked as naturally as possible, with a particular concern to protect natural balances and maintain bio-diversity. The collective is at the heart of our production system. Our team brings us competence and know-how everyday to bring the quality of our wines to the maximum. It is on these Ridellois terroirs loaded with history that we compose in parcel selection chiseled and tense whites, atypical rosés as well as unusual natural reds or sparkles. Thanks to our collaborations with winemakers, brewers or simply according to our meetings or our desires, we also regularly produce original vintage concepts. Our goal: to respect the different elements of the soil and the environment to obtain purity, precision and balance in our wines so that they are for you products of pleasure and universal sharing. THE CELLAR: The health of the grapes is one of our main concerns. This is why the harvest is done by hand with sorting on stump and in pierced boxes. Our average yields are 35 hl / ha excluding exceptional climatic hazards. In the cellar, we have a clear idea of our wine style and put experiments in place as part of a vinification with minimum inputs. The filling is done by gravity and without settling most of the time, the destacking is carried out wicker basket. The alcoholic fermentation starts with the action of indigenous yeasts and nutrients naturally present in the grapes. The vat room is composed of pieces made of wood, concrete, terracotta and sandstone. Before bottling, each wine is prepared case by case with a minimum of intervention. Bonding is very rare and optional filtration. Sulphiting is non-existent or moderate.
